What's in a name? Everything! if you ask new Green Dolphin Street executive chef, Robert Greene. Chef Greene , who has most recently served as Sous Chef at Green Dolphin Street, takes over the reigns at one of the nation's most distinctive spots for dining and sophisticated entertainment. Chef Greene will continue to impress with fresh innovations on classically grounded creations. Like some of the contemporary renditions of jazz standards diners might hear at Green Dolphin Street, Chef Greene's new menu items feature a modern twist on classic cooking. No matter what, the food is clean, often assertively flavored and beautifully presented. The menu features contemporary American cuisine with French and Asian cooking methods and flavors and the highest quality ingredients. First Courses include a taste bud awakening Peekytoe Crab Beignets with herb-garlic emulsion and citron infused caviar ($12.00). The stunning presentation makes a great first impression. The Warm Kabocha Custard with chargrilled scallions and fennel marmalade ($8.00) nicely balances the nutty sweetness of the squash with the smoky grilled scallion counterpoint. The Whipped Feta Agnolotti ($10.00) is a standout with Australian feta, Mediterranean ragout, micro herb salad and truffled balsamic glaze. Main courses include Greene's Roasted Red Snapper with caramalized onions, jingle bell peppers and chorizo sausage ($25.00). Besides packing a great punch of flavors, this dish offers intriguing texture, temperature, and flavor contrasts. The Millbrook Farms Venison Loin served with roasted quince, black trumpet mushrooms, and pomegranate sauce ($28.00) Green Dolphin Street has a seductive feel while keeping a finger on the pulse of contemporary tastes.
