Restaurant Description
By the time you reach your mid-twenties, you pretty much know how to dress yourself. You know which shirt matches those green pants and what to wear to a corporate cocktail party. Matching wine with food, however, is a whole ‘nother ballgame. We've all looked at a wine menu with a serious face and furrowed brow and then ordered according to the cool name scale. Thinking about food and wine simultaneously. Yikes! Enter Vin Bistro here. They have prioritized the art of pairing wine and food. Chef Chris Lusk and General Manager/Wine Director Adam Martinez run a tightly coordinated restaurant. Together they select wines to pair with each item on their seasonal menus. Adam conducts weekly seminars with the Vin staff so they can discuss and suggest wines proficiently. Vin was created by owners Rick Deitrick and Heath Hoselton as a tribute to American wines. They appreciate stateside wines for “blazing a path in the new world and for making such a distinct mark in winemaking in such a relatively short time.” At least 80% of the wines on the list are American with the other 20% coming from areas “producing equally distinct and exceptional wines.” Chef Lusk is similarly passionate about his menu selections. He carefully coordinates every detail to showcase the superb quality of his ingredients. The tender flavor of New Zealand venison is amplified by an understated green peppercorn brown butter, and spicy coconut green curry perfectly complements Prince Edward Island black mussels. The 16oz USDA Prime Grilled Ribeye with black truffle butter induced ecstatic moans from our tasters as did the Vin Sin Flourless Chocolate Cake. Try them both before they are deemed illegal.
