Howard’s Chili Recipe
3/4 pound of lean ground meat
¼ pound of chorizo sausage
2 onions, chopped
2 celery stalks, sliced
1 yellow bell pepper, seeded and diced
1 (10 ounce) package of white mushrooms, quartered
1 jalapeno pepper, seeded and minced
1 large garlic clove, minced
2 (14 ½ - ounce) cans of diced tomatoes
1 (15 ½ - ounce) can black beans, rinsed and drained
1 can of stewed tomatoes
3 cups of water
2 tablespoons of tomato paste
1 ½ tablespoons of chili powder
1 teaspoon of ground cumin
1 teaspoon of dried oregano, crumbled
½ teaspoon of salt
1/8 teaspoon of pepper
3 tablespoons of chopped cilantro
1 tablespoon of chopped chipotle peppers in adobo sauce
Begin by spraying a large nonstick saucepan with a cooking spray and set over a medium-high heat. Add ground meat and cook, breaking it up with a wooded spoon, until browned, 3-5 minutes. Drain off any fat from the ground meat.
Add the onions, celery, bell pepper, mushrooms, jalapeno and garlic, Cook, stirring occasionally, until the vegetables are softened, about 8 minutes. Add the tomatoes, beans, water, tomato paste, chili powder, cumin, oregano, salt, and pepper; bring to a boil.
Reduce the heat and simmer, uncovered, stirring occasionally, until the chili is thickened, about 45 minutes. Sprinkle with the cilantro and serve.
